1. Fill a pot on the stove with five or six centimeters of water, and turn the heat on low.
2. As the water heats, break up your dark chocolate bar.
3. Grab a glass or metal bowl that's large enough to rest on top of the open pot. Place the bowl on top of the pot.
4. Add your pieces of dark chocolate to the bowl. Allow the steam rising from the simmering water in the pot below to melt the chocolate in the bowl.
5. Heat the chocolate, stirring occasionally, until liquified.
6. Add half of the peppermint oil to the chocolate, and stir until incorporated.
7. Meanwhile, cover a flat sheet pan with aluminum foil.
8. Pour the melted dark chocolate over the aluminum foil. Use a spoon or spatula to smooth it into an even layer.
9. Place the pan into the fridge to chill until hardened, about 15 minutes.
10. Place a second bowl over the simmering water.
11. Break the white chocolate into chunks.
12. Add the white chocolate pieces to the bowl resting atop the pot.
11. Melt the white chocolate, stirring, in the same way you did the dark. Once it's liquified, add the remaining peppermint oil, and stir.
12. Add candy canes to a plastic sealable bag, and use something heavy to mash them into little bits.
13. Take your chilled tray of dark chocolate out of the fridge. Pour the white chocolate from the bowl on top of the dark, spreading evenly.
14. Sprinkle the candy cane bits on top of the white chocolate.
15. Put the bark in the fridge and chill until fully solid, up to 30 minutes.
16. Remove the aluminum foil from the chocolate, and break it into chunks. Throw a Christmas party, and eat the bark with your friends!
